A restaurant named after the Roman name for Gerze: an interior that combines the local and the modern in clay, white and timber, around an open kitchen that tells the story from field to table.

Karousa was the Roman name for the Gerze region. For Karousa Mantı & Nokul we designed a clean, welcoming space that blends local and modern styles, created to showcase Turkish cuisine.

The open kitchen puts hygiene first. A wall displaying local produce and raw ingredients traces the journey from field to table. A retractable glazing and roof system lets the restaurant adapt to summer and winter alike.

The palette draws on the earthy tones of nature and farmland: clay-coloured surfaces, white accents that suggest cleanliness, and timber elements that join local design with a modern line. Classic ceramic floor tiles complement the traditional architecture, and the furniture colours follow the brand's corporate identity.
